Read the numbers that actually influence staffing, menu mix, and margins.

Start with the four numbers that matter

Ignore vanity metrics. These four drive almost every decision:

  • Revenue by hour — reveals your true peaks and dead zones.
  • Best and worst sellers — tells you what to promote and what to cut.
  • Average order value — the lever most owners overlook.
  • Order volume trend — the early-warning system for slow weeks.

Revenue by hour: staff to the curve

If your revenue spikes from 12:00–13:30 and again from 19:00–21:00, that's where your staff should be — not spread evenly across a flat schedule. Matching labor to the revenue curve is the single fastest way to protect margins.

Menu engineering in practice

Plot every dish on two axes: popularity and profitability.

  1. Popular and profitable — your stars. Feature them prominently.
  2. Popular but low-margin — tweak the recipe or price.
  3. Unpopular but profitable — reposition or photograph better.
  4. Unpopular and unprofitable — cut them.
